Almond-Oat Bars with Chocolate Chips

Healthy breakfast almond-oat bars with chocolate chips that fill you up and will give you energy for a new day. This goody reminds brownies a little bit and you can also look forward to amazing scent that will spread throughout your entire home during their baking. This is another one of those simple fit recipes that are ready in a few minutes, and you'll love the result.

These almond cubes with oats are beautifully crunchy from outside and tender inside. You can also enjoy them with your favorite icing, such as almond butter or Greek yogurt mixed with vanilla and stevia. You can also pour it with yoghurt and sprinkle with fruit to create a beautiful looking breakfast full of flavors.

You can also prepare the cubes egg-free, but I recommend using it, they crumble less. Almond-oat cubes contain healthy fats from almonds and coconut oil and complex carbohydrates from oats. If you don't want to use cane sugar in the recipe, you can replace it with xylitol, glucose, coconut sugar or 1 tablespoon of stevia (if you're used to it) :)

  1. In blender, blend 1 cup of oats together with almonds onto the flour.
  2. In a bowl, stir the resulting flour with remaining oats and other dry ingredients.
  3. Finally, stir the mixture with melted coconut oil and vanilla extract and egg (or its pre-prepared flaxseed substitute).
  4. Pour the dough into silicone or baking mold lined with parchment paper (about 20x20cm(7.9x7.9in)).
  5. Bake for 20 minutes at 175 degrees Celsius (347 degrees Fahrenheit).
  6. After baking, let the cake cool down and roughly after 10 minutes it can be cut into cubes.
