Ingredients

  • 300g (10.6oz) chicken breasts
  • 1 zucchini
  • 300g (10.6oz) peas (or pea pods)
  • 100g (3.5oz) corn
  • 150g (5.3oz) mozzarella (best in balls)
  • cherry tomatoes (optional)
  • 1 tsp coconut oil (I recommend this one)
  • sea salt, black ground pepper, garlic spice

Instructions

  1. Melt coconut oil in a deep, non-stick pan.
  2. Add finely chopped chicken breasts and roast them on a light flame.
  3. When they slowly begin to catch the golden color, add finely chopped zucchini, peas and corn to the pan.
  4. Salt and pepper to taste.
  5. When the chicken breasts are finished, remove the pan from the heat, add mozzarella balls and tomatoes and serve when still warm.
