Roasted carrots in Parmesan

Roasted carrots in Parmesan

If you're looking for a quick, healthy, and flavorful side dish that goes well with everything from meat to fish, these roasted carrots in Parmesan are the recipe you've been searching for. And it's not only great as a side dish, but also as a healthy snack while watching a movie, as a snack, or as a creative treat for guests. The sweetness of the roasted carrots combines with the salty, crunchy Parmesan cheese to create a perfectly balanced combination of flavors that transforms ordinary vegetables into a delicious experience.

Carrots are full of beta-carotene, which is converted into vitamin A in the body – important for vision, immunity, and healthy skin. In addition, they contain fiber, potassium, vitamins K and B and are among the most affordable vegetables that should definitely be included in your diet. Baking brings out their natural sweetness, and when combined with Parmesan cheese, they become a nutritious meal that the whole family will love. Parmesan is not just about taste – it is also a rich source of protein, calcium, and phosphorus, making this combination ideal for those who want to eat light and healthy, yet nutritious meals.

Tip for even better flavor: Before baking, add a little olive oil, garlic, or herbs – such as thyme, rosemary, or parsley. If you like spicier foods, try adding a pinch of chili or smoked paprika. This will turn carrots into the perfect healthy side dish or a vegetarian meal on its own.

Baking is one of the healthiest ways to prepare food – it preserves the vitamins, minerals, and crisp texture of vegetables, while requiring minimal amounts of fat. These healthy roasted carrots with Parmesan cheese are a simple, quick, and nutritious recipe that will add color, flavor, and nutrients to any meal. Try them today – you'll see that vegetables don't have to be boring when prepared with imagination.

Ingredients

  • 500 g carrots
  • 2 tablespoons olive oil (I recommend this one)
  • 70 g grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon sweet ground paprika

Instructions

  1. Cut the washed and cleaned carrots lengthwise in half, then into smaller pieces.
  2. Place the carrots in a bowl, drizzle with olive oil, season with spices, and sprinkle with grated Parmesan cheese. If desired, you can also lightly salt them.
  3. Mix the carrots thoroughly and coat them in the mixture, then spread them on a baking sheet lined with parchment paper. I recommend using a spoon to transfer as much of the remaining mixture from the paper to the carrots as possible.
  4. Bake for about 25-30 minutes at 200 degrees until golden brown and crispy.
