Simple celery and broccoli soup

Excellent vegetable soup from celery and broccoli that is deliciously creamy without thickening it additionally. Ingredients

  • 4 celery stalks
  • 1 large broccoli
  • 1 1/2 liter of vegetable broth
  • 1 tbsp of olive oil (I recommend this one)
  • 1 onion
  • 3 cloves of garlic
  • 1 tsp of sea salt
  • 1/2 tsp of ground black pepper
  • coriander
  • thyme

Instructions

  1. Lightly fry the finely chopped onion on hot oil in a pot.
  2. Add washed and finely chopped celery stalks and broccoli.
  3. Fry the vegetables for a while and then pour vegetable broth over them.
  4. Add pepper, salt, crushed cloves of garlic to the soup and cook it covered for 15-20 minutes until the vegetables soften completely.
  5. Blend the soup using an immersion blender.
  6. The soup can be served with wholemeal toast cut into cubes.
