Soft Chickpea Cookies

If you're used to sweet recipes without any flour, I've got another tasty and healthy variation for your collection, this time for these soft chickpea cookies. They are low calorie, flourless and baked in less than half an hour.

Chickpea is a real protein bomb, and you should certainly test its power with the preparation of various sweet chickpea desserts, that contain a lot of fiber for better digestion, contain the required dose of iron and are also suitable for celiacs. You can prepare chickpea in both sweet and savory ways, it always supplies the food with enough nutrients, while keeping its great taste. It can also replace flour easily in the recipes and gives meals a fine nutty flavor.

My biggest favorites are the crunchy chickpea cookies (you can find the recipe on my blog too) and so far any other cookies haven't been able to overcome them, but this recipe for soft chickpea cookies is also very healthy, delicious and goes well with a tea or coffee. This healthy dessert without flour is easy, simple and quick to digest. Cookies are particularly suitable for tea or coffee afternoons. I like to prepare them as a morning snack, as a nutritious and filling alternative at the start of a new day. I prefer these healthy chickpea cookies with dark chocolate chips, try them too.

Instructions

  1. In a blender, blend all the ingredients (except chocolate) together, until as smooth as possible.
  2. Then fold in chocolate chips and shape the dough into balls.
  3. Place them onto a baking sheet lined with parchment paper and slightly press the tops.
  4. Bake cookies for 15 to 18 minutes at 180 degrees Celsius (350 °F) until golden.
