Zucchini Noodles with Broccoli-Peanut Sauce

Tasty, low calorie food with low carbohydrate and high protein content, which will, despite these features, fill you well. Healthy zucchini noodles with broccoli peanut sauce is another easy recipe that is finished in a few minutes, yet it fills you well and delivers a healthy amount of health benefits.

There is never enogh of sauces for zucchini spaghetti, also known as zoodles, so I bring you this broccoli-peanut combination. Definitely try this unique combination of broccoli full of protein, fiber, vitamin C and minerals such as magnesium, calcium or phosphorus, peanut butter rich in healthy fats and protein and Greek yoghurt that will give creamy and delicate flavor to the whole sauce.

The preparation is done in a matter of minutes, and if you have at home a beginner in the kitchen, you can charge him, he will handle the preparation of this meal for sure. He just needs to grate the zucchini (best with spiralizer (I recommend this one) or using potato peeler) and boil the broccoli. Next, blend it with other ingredients until smooth. You can decorate the finished meal with a slice of tomato, with basil or other vegetable and serve immediately. Thanks to low content of carbohydrate and total calories, this meal is also suitable for diets and weight loss.

Ingredients

  • 1 smaller zucchini
  • 150g (5.3oz) broccoli
  • 3 Tbsp Greek yoghurt
  • 1 Tbsp peanut butter (or peanuts) (I recommend this one)
  • 40g (1.4oz) grated cheese (mozzarella)
  • 50g (1.8oz) good quality ham (you can omit)
  • 1 clove of garlic
  • pinch of sea salt
  • pinch of ground black pepper

Instructions

  1. Rinse zucchini and grate it using a peeler or spaghetti grater.
  2. Cook the broccoli in boiling water (about 8 minutes), drain it and when still warm, blend it in a blender together with grated cheese, clove of garlic, peanut butter, yoghurt, ground black pepper and a pinch of sea salt.
  3. Add finely chopped ham into the sauce and serve.
