Almond shortcakes filled with strawberries and coconut whipped cream

These, very nice looking almond buns filled with strawberries and coconut whipped cream are healthy, gluten-free and suitable, for example, as a dessert for Valentine's Day. Their preparation is really easy and the taste is divine! They have a pleasant almond flavor, they are delicate and in combination with strawberries and whipped cream made of coconut milk, they will take care of the special atmosphere of any holiday.

If you don't have access to fresh strawberries, you can also use bananas or any frozen fruit. Fantasy has no limits here. This recipe for another healthy dessert from Fit Recipes workshop is additionally low carbohydrate and full of healthy fats. If you haven't tried to make such a fantastic coconut whipped cream yet, this is just the right dessert and time!

Do you have at home someone who is allergic to eggs? No problem, because you can replace them with ground linseed and water in this recipe. It is sometimes demanding to replace allergens in common recipes, but in some cases it's a pie. These healthy almond buns are sweetened with honey and everyone will like them for sure. The myth that healthy desserts are not tasty is busted once again.

  1. Let canned coconut milk sit in the refrigerator overnight.
  2. In a bowl, mix almond flour with spelt flour, add baking powder, salt and stir thoroughly.
  3. In a second bowl, mix eggs with vanilla extract, melted coconut oil and honey and stir the mixture with mealy ingredients.
  4. Once a homogeneous dough is prepared, shape balls from it and place them on the baking sheet lined with parchment paper.
  5. Before baking, press them with your hand. One piece of filled bun should be made of 2 thinner buns.
  6. Bake the buns for 15-20 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
  7. After baking, let them cool down.
  8. Wash strawberries and cut them into pieces.
  9. Take coconut milk from the refrigerator and use the thick white part of it, that has formed on top of the can.
  10. Mix it with honey (or other sweetener according to preferences).
  11. Finally, fill two mini buns with strawberries and coconut whipped cream and serve.
