If you are cooking with me for some time, you know very well that there's no need to be afraid of raw broccoli. It is excellent and it keeps a lot more vitamins without heat treatment. Avocado, rich in healthy fats, will give pleasantly delicate flavor to the salad, and the sheep cheese will unify all of these ingredients into a tasty, healthy broccoli salad. Ingredients

  • 400g (14.1oz) broccoli
  • 1 avocado
  • 1 Tbsp lemon juice
  • 2 Tbsp water
  • 2 Tbsp plain yoghurt
  • 100g (3.5oz) roasted chickpeas
  • 50g (1.8oz) dried cranberries
  • 50g (1.8oz) sheep cheese
  • pinch of salt (I recommend this one)
  • pinch of turmeric
  • pinch of ground black pepper

Instructions

  1. In a blender, blend the avocado together with 2 tablespoons of water, yoghurt and tablespoon of lemon juice.
  2. Add pepper, salt and stir well.
  3. Put the dressing to a bowl, stir with rinsed and finely chopped broccoli, roasted chickpea, cranberries and sheep cheese.
  4. Finally, you can season the salad with pepper and salt to taste.
