Buckwheat salad with coconut, cranberries and walnuts

This buckwheat salad in a sweet way is so great that you will want to eat it all at once. In addition, it contains only healthy ingredients that are greatly complementing tastes of one another. Buckwheat salad with coconut, cranberries and walnuts is one of my most favorite salads at all. It's great for breakfast, lunch and even for dinner, and since it takes less than 30 minutes to prepare it, I believe you will not do it the last time.

Buckwheat is a gluten-free cereal, also suitable for celiacs and contains a whole range of vitamins and minerals. It also contains a high level of rutin that takes care of vascular elasticity. It definitely should be part of diet menu of any fan of healthy food. Thanks to its neutral taste, it is be easily prepared in both savory and sweet way.

Grated apple, cinnamon, honey, coconut, dried cranberries and walnuts - it sounds like a beginning of delicious cake recipe. And it really is a delicious combination! Mix all of these ingredients into a cooked buckwheat and serve with, for example, fresh fruit such as raspberries or other berries. You can enjoy this sweet fit salad even warm or cold. In any case, you will lick your lips for long time afterwards :)

  1. Cook the buckwheat in boiling water (about 15 minutes).
  2. Roast walnuts slightly on a dry pan and then mix them in a bowl together with buckwheat and other ingredients.
  3. Serve the salad when still warm or cold.
