
Diet Strawberry-Quark Cake
Diet, but very tasty strawberry-quark cake. Perfectly suits for those days, when you have cravings for sweet dessert, but you don't have time to bake or stand in the kitchen for a long time. Its preparation will take you 15 minutes, but I think it will also take that long to eat it all :) This healthy no-bake quark cake doesn't contain any eggs or gluten Well, every celiac or person with egg intolerance will be pleased.
The amount of ingredients is listed for a mold with diameter of 17cm (6.7in). If you want to use larger mold, double the amount of ingredients. As for the sweetener in the filling, someone can have enough of the sweetness from strawberries, but if you prefer more sweet desserts, I recommend adding some stevia or banana.
Quark, yoghurt and strawberries are a great, refreshing combination especially suitable for hot summer days. Thanks to the fact, that the crust is made of oats, this fit cake has a higher content of fiber. Moreover, this low-fat cake contains only low amount of fat and high amount of protein - truly every athlete or healthy diet fan can enjoy it without any worries.
Decorate it with chopped strawberries or other berries, such as blueberries. Delight the quark dessert lovers with this easy and tasty cake. Feel free to cut one pice for breakfast, after lunch with coffee or prepare it as a surprise for your loved ones. Sprinkled with fresh fruit, this strawberry-quark cake really looks gala.
Ingredients
- For crust:
- 80g (2.8oz) oats (I recommend these)
- 1 Tbsp cocoa (I recommend this one)
- 3 Tbsp milk
- 40g (1.4oz) dates/raisin (I recommend these)
- For filling:
- 150g (5.3oz) Greek yoghurt
- 400g (14.1oz) quark
- 400g (14.1oz) strawberries
- 2 Tbsp gelatin powder
- 4 Tbsp hot water
- 1 Tbsp vanilla extract (or 1 pod)
- 1/2 tsp stevia (or 1 banana, scoop of protein powder or other sweetener according to taste) (I recommend this one)
Instructions
- Dip dates or raisins in water for an hour, then decant and blend in a blender with the other ingredients for the crust.
- Press the dough into the mold and put it in the refrigerator.
- In a blender, blend yoghurt with quark, stevia (or banana or other sweetener) and a tablespoon of vanilla extract (or seeds from vanilla pod).
- Add rinsed strawberries and blend the mass again.
- In warm water, dissolve 2 tablespoons of gelatin and then pour it into the filling.
- Again, blend until smooth.
- Pour the filling on a prepared crust and store in the refrigerator for at least 10 hours .
- The longer will cake be in the fridge, the better it will stiffen.
