Grate the apple finely and stir it (also with juice) together with eggs and cane sugar in a bowl.
Grind walnuts and oats almost into flour and stir it with prepared mixture.
Finally, add sodium bicarbonate and gingerbread spice mix to the dough.
Pour the finished dough into the mold lined with parchment paper (about 30*20cm (12*8)) and bake for 30 minutes at 175 degrees Celsius (347 degrees Fahrenheit) until golden.
After baking, let the gingerbread cool down and later cut it into cubes.
