Healthy Tuna Salad with Beetroot and Nuts

I love easy and nutritious salads the most of all, and this delicious tuna salad with beetroot and nuts is exactly like that. You will fall in love with the flavors combination of tuna, beetroot, crunchy nuts and cheese. This tasty and healthy salad will also please you with high protein and omega-3 fatty acids content.

Meals with beetroot are perfect for a healthy diet. Since beetroot is rich in vitamins, minerals, has a high content of folic acid, it is amazingly beneficial for our body and health and it boosts our immune system and digestion as well. It is also a great sources of nitrates and improves muscle regeneration, which is especially appreciated by athletes and active people.

You can use either cottage cheese or goat cheese in this salad - both variants are excellent, but if using cottage cheese, you will obtain a little more diet salad version. However, in both cases, you will benefit from the high protein content. This healthy tuna salad goes especially well as a light dinner. You can serve it alone or with a piece of whole-wheat bread. I recommend using pecans or walnuts, to obtain just the perfect taste.

Ingredients

  • 2 handfuls of lettuce or baby spinach
  • 200g (7oz) cooked, chopped beetroot (or pickled)
  • 100g (3.5oz) cottage cheese or goat cheese
  • 150g (5oz) tuna in olive oil (I recommend this one)
  • 2 Tbsp lemon juice
  • 40g (1.4oz) nuts (pecan nuts, walnuts..) (I recommend these)
  • ground black pepper

Instructions

  1. In a bowl, mix together tuna, lemon juice, ground black pepper, and finely chopped lettuce/spinach.
  2. Add chopped beetroot, cottage cheese, nuts and serve.
