Light Zucchini-Fruit Salad with Lime Dressing

I bring you a recipe for fresh and light zucchini-fruit salad, where the vegetable flavor of zucchini will be merged with sweet fruit and the delicious lime dressing will add the refreshing tones to the meal. It's a great choice for a summer, light and heat-fighting salad.

You can prepare healthy and easyzucchini-fruit salad with lime dressing fresh or a day before and take it to the work straight from the refrigerator. You can placidly serve it as a light dinner or as a side-dish to any meat. Famous zucchini has a high water content, low calorie content, and is rich in nutrients. It has a positive effect on digestion, effectively detoxifies the organism, protects and renews cells in the body. You can peel it into the salad using a peeler, but ideally using a spiralizer.

In the warm season, you can easily find or harvest tasty blueberries, which reduce cholesterol and supplement the body with antioxidants, vitamins and minerals. And sweet strawberries with a rich source of vitamin C will sweeten the salad and will give it the true scent of nature. We can also enrich the zucchini salad with dried cranberries, they act as a panacea for our urinary tract. And what a recipe would it be, if we didn't strengthen our brain cells, so we will sprinkle the entire zucchini-fruit delicacy with almonds to improve the activity of our head. For vegan version, just replace honey with maple syrup.

  1. In a bowl, mix lime juice with a tablespoon of honey.
  2. Grate or peel washed zucchini into noodles, or other desired shapes, and mix with the lime dressing.
  3. Add remaining ingredients and stir again so that all ingredients are thoroughly combined.
  4. Serve, preferably immediately.
