Ingredients
- 100 g thawed spinach puree
- 1 medium potato (150 g)
- 140 g semolina or spelt flour (I recommend this one)
- 1/4 tsp salt
- cottage cheese (for serving - optional)
Instructions
- Boil the potatoes in water until soft and let them cool.
- Mix the thawed spinach with the mashed potatoes and semolina or flour and a little salt until a homogeneous dough is formed.
- Cut the dough into strips and then into small squares.
- Cook the gnocchi for about 5 minutes in salted boiling water until they float to the surface.
- Drain the gnocchi and rinse them under cold water to prevent them from sticking together.
- Serve with salted or seasoned cottage cheese and fresh herbs, or with another sauce.
