Coconut Flour Crumpets with Fruit Ice Cream

These delicate coconut flour crumpets are gluten-free and sugar-free. You only need a few fantastic ingredients like coconut flour and applesauce to prepare this gluten-free and protein-rich dough. The crumpets are incredibly tasty, tender, nutritious and easy to digest. Do you need some more reasons to prepare a sweet lunch today? :)

Coconut flour is great, you just need to use minimum quantity in the recipes. It has high absorption capacities (so more eggs need to be used), it is full of healthy fats and fiber and it tastes and scents nicely. It is great for sweet recipes, cakes and desserts. Stir dark chocolate chips into the dough and move the whole recipe to another level.

You can prepare fruit ice cream very easily - just blend frozen fruit with a good blender ( (I recommend this one) ) into a soft cream. If you still don't keep a few bananas in the freezer, it's time to change it - frozen bananas will let you conjure a healthy ice cream at any time, for example like this one:

Ingredients

  • 3 eggs
  • 4 Tbsp coconut flour (I recommend this one)
  • 2/3 cup applesauce
  • 1/4 tsp sodium bicarbonate
  • dark chocolate chips (optional) (I recommend these)
  • For ice-cream:
  • 200g (7.1oz) frozen fruit (e.g. berries)
  • 1 frozen banana
  • 3 Tbsp Greek yoghurt
  • 1/2 scoop protein powder (optional)

Instructions

  1. In a bowl, stir all the crumpets ingredients together.
  2. Heat the pan and then dose the dough with spoon in shape of crumpets.
  3. Cook the crumpets at low temperature for about 2-3 minutes on each side.
  4. If your pan has a tendency to stick, you can use a little oil (best in spray, but without hydrogenated fats).
  5. If your crumpets fall apart, try to make them smaller.
  6. Take fruit for ice cream from the freezer and put it in a bowl together with yoghurt.
  7. Leave it for about 3 minutes at room temperature and then blend it with a stick blender into ice cream.
  8. Pour the finished crumpets with prepared ice cream and serve. You can also sprinkle them with cocoa nibs.
