
Healthy Banana Oatmeal Muffins Recipe
Soft, very tasty, easy and healthy banana oatmeal muffins without added fat or refined sugar that are flourless as well. Try them out, for example, for breakfast, as a healthy morning snack or dessert.
In this recipe for fit banana muffins, we will use oats instead of flour. They are rich in complex carbohydrates, thus release energy into the body gradually and not all at once. Instead of oil, we'll use plain Greek yogurt, which additionally enriches these banana oatmeal muffins with a good dose of protein. To thin out the dough, you can use any milk, whether a classic cow's or plant-based milk. Be sure to use bananas that are as ripe as possible - muffins will then have unique banana flavor and you will have to use only minimal amount of honey. You can prepare these healthy muffins with or without eggs. Both variations are great and there is almost no difference in their taste or structure.
These healthy banana oatmeal muffins are relatively low in calories, also due to their low fat content. To prepare them, you will only need a few minutes of time, 1 bowl and few commonly available ingredients. The recipe is especially useful when you don't know what to do with overripe bananas. You can customize their taste according to yourself, by adding various nuts, chocolate pieces, coconut or dried fruit, even with a pinch of cinnamon.
Ingredients
- 2 cups oats (I recommend these)
- 1 cup (220 g (7.8 oz)) plain Greek yogurt
- 2 ripe bananas
- 1/4 cup milk
- 4-5 Tbsp honey (or maple syrup) (I recommend this one)
- 2 tsp baking powder
- 2 eggs (optional)
- pieces of dark chocolate, nuts, raisins (optional) (I recommend these)
Instructions
- Blend or grind oats into fine flour.
- In a bowl, mix them with mashed bananas and then with all remaining ingredients.
- You can also add in pieces of dark chocolate, nuts, dried raisins or cranberries.
- Divide the resulting dough into 12 muffin cups.
- Bake muffins for 20-25 minutes at 200 degrees Celsius (390 degrees Fahrenheit), until golden.
