Healthy 2-Ingredient Banana Pancakes

Banana and eggs - these are the only two ingredients you need for these banana pancakes. You can prepare pancakes or smaller crumpets out of the batter.
These tasty pancakes are completely flour-free of and milk-free, and therefore they are also suitable for celiacs and lactose-intolerant people. It's an easy and quick recipe, that I'm preparing very often and I like it very much. Everyone can choose desired garnish - for example, you can serve it with fresh fruit, yogurt, nut butter, maple syrup or dark chocolate, high quality jam or homemade ice cream.
The most important part of this recipe is to have a quality, non-stick pan, then these pancakes come out beautifully. If you don't have the most reliable pan, try to make small crumpets and flip them halfway through cooking, as fast as possible, to keep them uncut. The batter is very smooth, so another tip for a good fit banana pancakes is to have them cooked thoroughly from one side, edges and center before flipping, on medium heat.
In the recipe, use bananas as much ripe as possible for a distinct banana flavor. For fitness version, you can add in some protein powder to the batter. You can also adjust the pancakes according to your taste – add some gingerbread powder, cinnamon, or cocoa.
- 1 ripe banana
- 2 eggs
- In a blender, blend banana and eggs together until smooth.
- Spoon batter onto a non-stick skillet and cook until bubbles begin to form.
- Flip, and continue cooking until golden brown on the bottom.
- Serve with desired garnish.
