Healthy Quinoa Parfaits

Try this tasty, simple and nutritious quinoa breakfast. Replace ordinary oatmeal with this interesting layered parfait, which can be prepared one or two days in advance.

You will find a unique flavor in each layer of this delicious breakfast parfait, where the yoghurt layer with fresh fruits is followed by crunchy honey quinoa.

Quinoa is a gluten-free pseudo-cereal that contains large amount of complex proteins, dietary fiber (soluble and insoluble), vitamins and minerals. It also is the perfect source of all essential amino acids and should be, in my opinion, included in the diet of every healthy lifestyle fan. The white quinoa is the best choice for this recipe, because of its most neutral taste, but you can also try its red and black varieties, if you want to experiment.

  1. Cook quinoa in water as instructed and mix with two tablespoons of honey.
  2. Then layer all ingredients into cups.
  3. You can eat the parfait immediately or let it chill for couple of minutes in the refrigerator.
