Protein-oats fitness stole

This protein-oats fitness stole, flourless and sugar-free is excellent and with unassuming preparation. This gluten-free stole full of protein without added milk and sugar is often a star of our gala dinner. Its preparation is very easy and tastes great. It is low calorie and contains just a little fat, which makes it a perfect fit dessert, for example, on a Christmas table.

It contains only oat and coconut flour, which makes it a suitable dessert for celiacs as well. Add protein powder to increase protein content in the stole. However, use the protein concentrate, not the isolate - otherwise the stole will be drier. You can add any favorite ingredients into the dough. I used raisins, dried apricots and nuts, but the choice is only on your fantasy and taste.

It's good to know the abilities of your oven, when baking this healthy fitness stole. Adjust the baking time according to your oven and be careful not to overbake it, otherwise it will be drier.

After baking it can be sprinkled with coconut flour to look like the one from catalog. For healthy and tasteful Christmas! :)

Ingredients

  • 3/4 cup oats (ground or flour mixed) (I recommend these)
  • 1/4 cup vanilla protein powder (best sweetened with stevia)* - alternatively replace with oats
  • 2 Tbsp coconut flour (I recommend this one)
  • 1 tsp baking powder
  • 1 egg
  • 2 egg whites
  • 50g (1.8oz) raisins
  • 40g (1.4oz) dried apricots (finely chopped)
  • 30g (1.1oz) almonds/walnuts (I recommend these)
  • 1 tsp cinnamon
  • 1 tsp cardamon
  • 1 Tbsp grated orange peel
  • stevia (or another sweetener according to taste) - only if you didn't use sweetened protein powder! (I recommend this one)

Instructions

  1. Mix all the ingredients for stole together.
  2. A sticky dough arises, place the loaf on a baking sheet with parchment paper.
  3. Bake stole for 20-25 minutes at 160 degrees Celsius (320 degrees Fahrenheit) until golden. Adjust the baking time according to your oven.
  4. Be careful not to overbake, otherwise it will be drier.
  5. After baking, we can sprinkle the stole with coconut flour.
