  1. Rinse eggplant and cut it into rounds (8 pcs).
  2. In a bowl, stir the egg with a pinch of salt and ground black pepper.
  3. Smear the eggplant rounds with egg on each side and then wrap them in oat flour.
  4. Put wrapped rounds on the baking sheet or in the baking bowl side by side and bake for 30-40 minutes at 200 degrees Celsius (392 degrees Fahrenheit).
  5. The eggplant will be crunchy from outside and tender from the inside.
  6. Finally, spread some goat cheese between each 2 eggplant rounds and serve separately or together with lettuce.
