Healthy avocado muffins from chickpea or oat flour

These muffins are excellent, healthy and easy - that's exactly what all the recipes are on this page are :) Healthy avocado muffins from chickpea or oat flour are done in no time and everyone will enjoy them. They are gluten-free and thanks to avocado, used instead of oil, they contain lots of fiber and at the same time less fat. If you love desserts as much as your health and slim line, definitely try this simple recipe too.

You can bake them with or without protein powder, and you can use chickpea or oat flour, according to what do you have right on hand. Both are suitable and definitely more nutritious and healthier than traditional flour. Muffins contain a minimum of sweetener. For the best result, I recommend using only a tablespoon of stevia and complement with honey. Oil is replaced with avocado and applesauce in this recipe.

Definitely don't forget to add your favorite ingredients into the dough - coconut, nuts, raisins, cocoa, pieces of dark chocolate or anything else, according to your own taste and fantasy. If you have a very creative moment, divide the dough into several parts and create several versions of muffins right away. When I bake these muffins at home, I sort of different flavors according to the color of the paper mold. That way we always know that the yellow are coconut, blue with pieces of chocolate and green ones cannot be touched by my friend allergic to nuts.

Ingredients

  • 1 cup chickpea or oat flour (finely blended/ground oats) (I recommend this one)
  • 2 scoops (60g(2.1oz)) protein powder (can be replaced with selected flour)
  • 2 eggs
  • 1 smaller ripe avocado
  • 5 Tbsp milk
  • 4 Tbsp honey/maple syrup/agave (I recommend this one)
  • 1 tsp stevia powder (or another 3-4 Tbsp honey/agave) (I recommend this one)
  • 1/2 cup of applesauce
  • 2 Tbsp baking soda
  • 2 tsp vanilla extract or 1 vanilla pod
  • coconut, raisins, cranberries, cocoa, nuts, dark chocolate.. (to taste) (I recommend these)

Instructions

  1. In a bowl, mix all the dry ingredients together.
  2. In second bowl, mash avocado with fork (or blend) and mix it together with other wet ingredients.
  3. Fold them into the dry mixture.
  4. You can add coconut, raisins, nuts or other ingredients to your taste.
  5. Place the dough into silicone or paper muffin molds up to about 3/4, and bake for 15-20 minutes at 180 degrees Celsius (356 degrees Fahrenheit ) until golden.
