Egg muffins with mushrooms
You will fall in love with the recipe for these simple fit egg muffins with mushrooms. It is quick, simple and the result is so delicious. At the same time, these savory fitness muffins do also have great nutritional values - they contain a lot of protein and, on the other hand, little carbs, fats, and calories. Try them for dinner, for example, or prepare them as a healthy snack for the whole family.
I like this type of food very much because it can be prepared really quickly, it tastes great and at the same time, you can consume ingredients from the refrigerator, which are slowly approaching their expiration date. You can also experiment with the recipe and use your favorite ingredients in it. Just mix everything together in 1 bowl, portion the mixture into molds, and bake. Here - a healthy and tasty dinner is on the table. I recommend using silicone molds for the preparation - muffins are then much easier to take out.
I prefer to use fresh mushrooms for these salty egg muffins, but if you are interested, you can also try the recipe with dried mushrooms. However, you will need to pour hot water over them and let them soak for at least 20 minutes to soften them a bit before mixing them into the dough.

- 6 medium eggs
- 200g of cottage cheese
- 200g of brown champignons
- 1/2 of red onion
- 2 cloves of garlic
- 1/2 tsp of salt
- 1/4 tsp of paprika
- 1/4 tsp of ground black pepper
- In a bowl, mix eggs with cottage cheese (without the liquid), finely chopped red onions, crushed cloves of garlic, salt, and spices.
- Add washed and finely chopped mushrooms.
- Portion the dough into 12 muffin molds (preferably silicone).
- Bake these savory muffins for 25-30 minutes at 180 degrees until golden.
- After baking, let them cool for at least 5 minutes, and then remove them from the molds.
