Fit zucchini noodles with chicken and parmesan cheese are extremely easy to prepare, so no beginner should be afraid of this recipe. The recipe is also perfect in terms of ingredients, as you only need a few commonly available items for it.

It is best to use a spiralizer (I recommend this one) to make zucchini noodles, also called "zoodles". However, if you don't have one, you can also use a vegetable peeler. I prefer to serve zucchini noodles raw, but if you want, you can cook them in a pan until soft - try both versions and see which suits you better.

Since this simple meal is diet-friendly, it is also ideal for weight loss and I prefer to prepare it in the summer when I naturally have a craving for lighter meals. I definitely recommend you to try this healthy dish with spiralized vegetables.

Ingredients

  • 300g of chicken breasts
  • 2 larger baby zucchinis
  • 1 tbsp of olive oil (I recommend this one)
  • 2 tbsp of grated parmesan cheese
  • 2 cloves of garlic
  • cherry tomatoes

Instructions

  1. Wash the zucchini, remove the ends and grate them into noodles using a spiralizer (I recommend this one) or a peeler.
  2. Cut the chicken breast into small pieces and grill them in a lightly oiled pan until golden brown (about 5 minutes).
  3. Meanwhile, mix the grated zucchini with olive oil and crushed garlic.
  4. Zucchini noodles are served topped with chicken, cherry tomatoes, and parmesan cheese.
